These are simple to make, and really delicious! They are perfect for kids or adults, and a great little Easter treat!
INGREDIENTS:
- 1 pack of organic coconut cream
- 1/2 cup of hot water
- 8-10 dates
- 3/4 cup coconut sugar
- 1 cup of shredded coconut
- 1 tsp. of vanilla extract
- 2 tbsp. of Kite Hill cream cheese (or vegan cream cheese of choice)
- Juice from 1/2 a Lemon
- 1 pack of Enjoy Life Chocolate Chips (or vegan chocolate chips of choice)
DIRECTIONS:
- Blend all ingredients EXCEPT for your chocolate chips in a blender until smooth
- Then put your blended paste into the freezer for 1 hour
- After about an hour, take your paste out of the freezer and roll into egg-shaped balls
- Freeze your "eggs" for another 1-2 hours
- Then double boil your chocolate chips
- Once your chocolate chips are melted, use a toothpick to dip your eggs into the melted chocolate
- After all your eggs are dipped in chocolate, put them back in the freezer for about another hour or until hardened.
- Enjoy!

Aww, these are so cute! I also attempted to make chocolate eggs but shaping them was a lot harder than I thought they’d be and I ended up sticking with balls. I can’t find Kite Hill cheese where I am but I want to try it so badly!
