BIG BOWLS OF RICE, LENTILS, & VEGGIES
INGREDIENTS
- 2-3 Persian cucumbers
- 1 package of Trader Joe's already cooked beets
- 1 package of Trader Joe's already cooked lentils
- 1 package of Trader Joe's frozen rice
- Tamari
- Dulse flakes
DIRECTIONS
- Heat up frozen rice in microwave for 2 minutes
- Heat up lentils for 1 minute and 30 seconds
- Cut cucumbers & beets
- Serve all ingredients in a large bowl
- Top it off with Tamari and Dulse flakes
- Enjoy!

PASTA WITH AVOCADO & ARUGULA
INGREDIENTS
- Pasta of choice
- Tomato Basil Marinara of choice
- Fresh Dill
- Fresh Chives
- Arugula
- Avocado
DIRECTIONS
- Boil water for pasta
- Chop dill & chives while water boils
- Add pasta to boiling water (follow instructions on packaging to see how long)
- Cut up avocado
- Strain water from pasta
- Add sauce to pot, add pasta, and then stir until mixed well
- Serve in large bowl with avocado and arugula, top pasta off with fresh dill & chives
- Enjoy!

SIMPLE SOBA NOODLES
Ingredients
- 1 packet of Soba Noodles (Buckwheat Noodles)
- 3 tbsp. of Soy Sauce
- 1 tbsp. of Rice Vinegar
- Green Onions
- Dulse Flakes
DIRECTIONS
- Boil water for soba noodles and follow directions on packaging
- For the sauce, mix soy sauce, rice vinegar, and dulse flakes
- Pour sauce over cooked pasta
- Top with green onions
- Enjoy!

PIZZA
INGREDIENTS

Trader Joe's Garlic Pizza Dough
- Crushed garlic

Heidi Ho Smoky Chia Cheeze
- Artichoke antipesto
- Mushrooms
- Olives
- Cherry Tomates
- Basil
DIRECTIONS
- Preheat oven to 400 degrees
- Spread the dough out on a cookie sheet
- Spread garlic, chia cheese, & artichoke antipesto on the dough
- Cut up mushrooms, tomatoes, and olives
- Throw the veggies on the pizza
- Bake in the oven for approx. 12-15 minutes
- Enjoy!

SWEET PESTO SAUCE & ZOODLES
INGREDIENTS
- 3 mangos
- 1 avocado
- 4-5 green onion stalks
- 2-3 handfuls of basil
- 3 garlic cloves
DIRECTIONS
- Blend all ingredients in a blender.
- Use as pasta sauce, salad dressing, dip for veggies & chips (pretty much whatever you want).
- Enjoy!

TEMPEH TURKEY
INGREDIENTS

Pacific Foods Vegan Mushroom Gravy
- Fresh dill, rosemary, and chives
DIRECTIONS
- Boil water
- Thinly slice or "carve" your tempeh
- Add tempeh to boiling water for 8-10 minutes
- Cut dill, rosemary, and chives
- Carefully (using a tongs) remove the tempeh from water
- Pour excess water out, and add Vegan Mushroom Gravy too the pot & heat
- Add tempeh, dill, rosemary, and chives to gravy until gravy is fully heated (leaving a few bits for garnish)
- Enjoy!
